  2. Prepare 2 green chillies
  3. Get 8-10 garlic cloves
  4. Prepare 1/4 cup oil

  6. Get 1/2 teaspoon turmeric powder
  7. Make ready 1 tablespoon yellow mustard seeds
  8. Make ready 1 tablespoon red chilli powder
  9. Make ready 1/4 teaspoon asafoetida
  10. Take 1 tablespoon lemon juice
  11. Get 1 teaspoon achaar (pickle)masala (optional)
Steps to make Instant Carrot pickle:
  1. Wash, peel and cut carrots into pieces. Cut green chillies into big pieces. Cut garlic cloves into slices. Heat oil until vapour release. Then cool down completely at room temperature.
  2. In a mixing bowl take salt, turmeric powder, red chili powder, yellow mustard seeds and asafoetida. Mix well. Add carrot, green chillies, garlic cloves and lemon juice and combine well.
  3. Add oil and achaar masala and mix well. Rest for 4-5 hours. Then transfer into jar. You can store it in fridge for 15 days.
